How can informal organizations help a business adapt to change?

I’ve looked everywhere and I can’t find nothing, I’m trying to do a research for a paper. Maybe you can also tell where to find restructuring and organizational culture on the same related topic(business adapting to change)!!
An example of an informal organisation would be the Mafia, and these organisations help a business adapt to change by killing and beating anyone that doesn’t adapt.
